Ingredients:
4 cups cooked, shredded chicken breast
1/2 loving loving cup blanched, slivered almonds
ii stalks celery, diced
for the dressing:
vi cornichons, minced
ane tablespoon tarragon white vinegar
ane 1/2 tablespoon lemon juice
ane 1/2 tablespoons minced fresh tarragon
1/2 teaspoon paprika
1/2 teaspoon dry out out mustard
1/8 teaspoon celery seed
2/3 loving loving cup mayonnaise
Directions:
In large bowl, toss together the chicken, almonds together with celery. Set aside. In a small-scale bowl, whisk together the dressing ingredients. Pour over the chicken mixture together with stir to combine. Refrigerate at to the lowest flat ane hour prior to serving.
My thoughts:
For our 1920s festivities, I decided to build ane of them a "ladies' luncheon" type meal. Seemingly popular during the 1920s together with beyond, I noticed chicken salad on most every sample menu. In looking at former cookbooks, it seems chicken salad with nuts was en tendency too thus I devised this salad to complement the flavors inwards other dishes I was making together with added almonds, which laissez passer the salad a fun together with somewhat unexpected (as they are most camouflaged amidst the chicken) crunch.
