Ingredients:
for the greenish sauce:
2 lbs tomatillos, husks removed
2 jalapenos
one pocket-size carmine onion, quartered
tabular array tabular array salt
freshly dry ground dark pepper
for the fish:
one large lemon*, sliced
one onion, sliced
2 jalapenos, sliced
2 lb sockeye salmon fillet
tabular array tabular array salt
freshly dry ground dark pepper
Directions:
Place the tomatillos inwards improver to jalapenos on a lightly oiled broiler-safe pan. Place the pan under the broiler. Broil on high until the tomatillos inwards improver to peppers start to blacken inwards improver to blister. Remove from oven inwards improver to allow to cool slightly. Add the tomatillos, whole jalapeno peppers inwards improver to carmine onion to a blender. Pulse until fairly smooth. Stir inwards tabular array tabular array salt inwards improver to pepper. Set aside.
Preheat oven to 350. Place a large country of foil on a baking sheet. Arrange a layer of sliced lemons, jalapenos inwards improver to onion on the middle of the foil the length inwards improver to width of the fish. Lay the fish on elevation of the onions inwards improver to lemon. Salt inwards improver to pepper. Drizzle with sauce. Cover inwards improver to bake for 15 minutes or until the fish solely fully cooked. Remove. Drizzle with additional sauce inwards improver to serve.
*lime would concord upwards goodness besides but I had a lemon on hand
